Pie Fries with Strawberry Ketchup

I often find that most food tastes better as leftovers, when it’s had time to sit and let the ingredients and flavors meld.  But what I am really finding, as I bake, is that an ingredient for one recipe often drives the idea for another.  I simply don’t want to waste, an often costly ingredient, and I want to use it up to the extent that I can.  And so this morning I was making a pâte sucrée for another recipe.  And I decided to turn the scraps into these delicious little cookies to be dipped in the leftover strawberry jam that I made from my Peanut Butter and Jelly Ice Cream. 

Honestly, these were so surprisingly good, I’d consider making sweet pastry crust just for the purpose of making a big batch of these cookies!  Or if you need a quick and easy dessert, you could even buy the pie crust dough, roll it, cut it and toss a little sprinkling sugar before baking for about 15 minutes.  Serve with your favorite jam for dipping.  I’ll never throw out those scraps again!

 

Peanut Butter and Jelly Ice Cream

YES!  Peanut butter and Jelly in ice cream!  Because…..it’s Kitchen Improv!

I took a short break and some much needed time to catch my breath; and I wasn’t sure I’d be able to participate in this month’s challenge.  But I just love this group.  And I couldn’t resist!  And so I admit…..I kept it simple for myself this month.  SIMPLY DELICIOUS and almost addictive!  Thanks so much to Kristen from the Frugal Antics of a Harried Homemaker for being the wonderful hostess for such a great group of food fanatics!  I am looking forward to seeing what everyone did with our two key ingredients this month….peanut butter and jelly!  These ingredients were likely suspects for an ice cream because not only do I like my ice cream sweet…..but oddly, I prefer it salty, too!  My PB & J’s are always made with my favorite, strawberry jam, and it’s so easy to make from scratch.  Come try this!  It’s rich, creamy, sweet and salty.  And it couldn’t be easier….. Chocolate Strawberry Turnovers

The cycle of a lazy Sunday morning.  I am too comfortable in my bed and my eyes remain closed as I contemplate how to spend this beautiful day.  Everything about this morning feels good.  And soft.  The soft, cool breeze wafting through my window stirs me to wrap my favorite soft, cotton blanket around me, my feet, still poking out.  The soft, tinkling of the wind chimes relax me to sink even deeper into my soft, pillowy feather bed.  I can sense that my soft and sweet, affectionate cat, Sinclair, has come to enjoy the morning, too.  His soft little face gently nudges my head.  Nudging, but I won’t open my eyes.  Nudging, and my nose begins to itch.  Nudging, I roll over.  Nudging, he finds me on the other side.  Nudging, nudging, nudging!  Sinclair!!! 

So Sinclair is out and I am up!  A warm cup of coffee, light with cream begs to wash down…..something.  The coffee keeps me focused just enough to layer mascarpone, strawberries, strawberry jam and bits of milk chocolate on cold flat pastry.  But I am patient….I know that it’s just a matter of time until the dough warms and puffs and flakes and browns in the oven.  Wait!  Let me sprinkle it with sugar and toss some almonds on top for good measure!  And it’s just as I had hoped!  Maybe even more!  Warm and crusty, sweet and gooey. Chocolate and strawberries mingling and oozing.  It’s pure, blissful, comforting.  And it’s gone before my coffee has time to wash over it.  A few more sips.  And I am tucked back in bed.  The perfect lazy morning until….. Peanut Butter and Jelly Bars

It’s BAKED.  It’s SUNDAY.  It’s MORNING!

And it’s what I just had for breakfast!  Hey friends….I can justify anything!  But look at this!  Creamy peanut butter with strawberry jam and a crumbly oat topping all sitting pretty on a sweet, pastry crust!  Those ingredients speak breakfast to me!  Or lunch.  Or dessert.  Or a midnight snack!  Baked Sunday Mornings is a wonderful group of people who love Baked Explorations, a fabulous cookbook by Matt Lewis and Renato Poliafito.   This week, we baked an upscale version of the classic peanut butter and jelly bar.

To me, this is almost like eating a fancy sandwich.  The peanut butter becomes almost mousse-like and is topped with your favorite jam (which for me, in PB & J’s is always strawberry!) and sandwiched between a sweet crust and a brown sugar and oatmeal crumbleA little slice goes a very long wayit is pretty rich!  The recipe is a little bit time/labor intensive.  The dough is made, then chilled, then rolled and fitted to your baking dish, and chilled; and then blind baked while the peanut butter concoction is mixed and the oat topping is created.  This is where I’ve learned to be patient in baking and I don’t mind jumping through a lot of hoops to get a good product. 

The only stumbling point for me was when making the crust.  The ingredient list called for 1 large egg.  But in the directions for making the crust, it called for us to whisk the ‘eggs’.  And when I put everything in the food processor, my ingredients didn’t come together as I had expected.  It was pretty dry and not holding together to form a dough.  Which led me to question, did the authors mean for us to use 2 eggs?  So I added another and it worked out just fine.  Well worth the work and the wait.  All in all, on a scale of 1-5, I’ll give this 4 scrumptious whisks!

Pistachio, Strawberry & Vanilla Semifreddo

 I just love this quote!  It rings so true for me.  But the other three things it takes for me to be happy are pistachio, vanilla and strawberry!  I know it’s not the classic trio of flavors, but I would gladly trade chocolate for pistachio anytime!  I think ice cream is easier to make than a semifreddo (of course….because my ice cream maker does all the work!)  But I must admit it is satisfying to make a frozen treat by hand.  And this is definitely a much lighter version of ice cream.  Not at all difficult to make.  Just need a little patience and waiting time between layers.  But what a pretty presentation….. Strawberry Breakfast Cookies

I am not a big breakfast eater.  I prefer to skip breakfast and indulge in a larger and very leisurely brunch.  And I prefer to eat breakfast for my dinner!  Go figure.  What I really love to eat for breakfast are pastries and sweet things with either a cup of cafe au lait or tea with milk and sugar. And while I LOVE a good sticky bun; sometimes a simple piece of brioche with a little jam is all I need.  Mostly, these days….my breakfast is on the fly.  And so anything made portable is great!

Berry Basil Ice Cream

B is for BASIL

 

Well this is the second post in my series “My Spice Rack from A-Z”.  This month, I had to choose a spice beginning with the letter B.  Not sure what is in your spice rack that would fit the bill.  But I had bay leaves and basil!  While I cook enough times with both spices, I’ve never created a dessert with either.  Inspired by a poem by Keats, I chose basil!

I searched online a bit, and most recipes matched basil with lemon, and usually in a panna cotta.  I decided to keep it simple and basic and I made some ice cream.  I made it a bit differently than I usually do.  And I wonder if those of you who make ice cream can tell me the difference……….  Strawberries…you and I had a little falling out this week.  Actually, we almost broke up!  I don’t like drama in my kitchen.  But there you were….weeping and bleeding all over my lemon tart!  And now you want to get back together again?  Can I trust you?  Can I even forgive you?
