Well if this mom has a way with desserts, her kids would never know.  They don’t eat them much!  I don’t know what to say other than I can’t believe they’re mine.  But my kids just aren’t sweet eaters.  Birthday cakes?  Unless it’s plain vanilla, no icing, with a slight sprinkling of powdered sugar…..maybe.  Ice cream?  Now we’re talking!  So when the “fabulous 14”, the fun loving, creative and talented women who brought you Crêpe Week, Beer Week and Soup Week decided on Sweets Week, my head went straight to this recipe. 

It has been a really fun week of Sweets for Your Sweetie Pies.  The true sweetie pies in my life are my boys (now young men).  So I decided on this incredible Berry Smoothie Ice Cream Pie.  Every luscious layer of this ice cream pie blends together to have you feeling like you are enjoying your favorite smoothie.  Pureed strawberries, bananas and blueberries are combined with vanilla frozen yogurt and stacked on a sweet granola pie crust.  Your spoon may not be fast enough and you’ll be wishing you had a straw!  And I’ve put together a Pie Package for one lucky winner. . . . . My apologies to my baking buddies, from the yet un-named, but little baking group that could, for being late in publishing this post.  This month, we decided to make life a bit easy for ourselves around this hectic time, and simply post a favorite side dish or baked good that typically graces our Thanksgiving tables.  I have to give GREAT credit to all those who blog dinner recipes!  I had two ideas to share.  One was of a sweet potato casserole.  But I have to tell you….trying to get that onto my Thanksgiving dinner table while everyone is sitting around starving, and then saying….“wait….I have to snap a picture first!”…..was a bit tricky.  So to avoid a massive food fight, I opted for dessert instead.  (We baking bloggers definitely have it easier!).  I decided that when everyone fell into their food comas, I would photograph this pie.  Suspiciously, though, there was already a slice cut from it!!!  But I couldn’t be upset.  I’m a big advocate of  ‘eat dessert first’!  And it was THAT good.  I couldn’t decide between making a pumpkin cheesecake or a pumpkin pie.  So I combined both into this luscious pumpkin cheesecake pie!  A perfect ending to a lovely day. . . . . With fall baking comes pies!  Lots of pies!  I love pie and I love making them.  And the finished product is always so impressive.  But when you just want an itty bitty bite…. it’s hard to cut yourself just a little sliver.  You know what I mean!  That piece of pie, which is so tall and full and stands so proud on your plate…..well as delicious as it may be ….it’s reduced to a fruity crumbly mess when you try to cut just a thin slice.  So here is all of the goodness of a pie, in this case pear, in a flatter form.  I’ve cut these into little pie wedges; but you can cut them into bars or squares.  So cut yourself a small piece ….because you’ll still have the bottom crust, the top crust and all that great fruit in between!  And the interesting ingredient in this recipe (at least to me) was…….. Ahhhh Maud….I hope you are right!  Then there’s all the more reason we should all eat this sweet, creamy, tangy pie …and often!  It’s not that there’s a crazy amount of lemon in this pie that makes it so good.  But it’s what’s going on in the layers that makes it incredible.  The most concentration of tangy lemon flavor is in the crust.  The lemon cream is light and sweet.  And then the whipped cream on top is only kissed with the zest of the lemon.  So each bite has you puckering, savoring, licking your lips and digging in for more!  The secret to the tart, lemony crust is…… [Read more...]

This is so far the BEST  ice cream I have ever tasted in my life!  I love it because it truly is a great combination of pie and ice cream.  I’ve seen other recipes include graham crackers in their version of ‘pie ice creams’.  But pie to me, is crust, not crackers.

This ice cream has all the components of pie a la mode.  Sweet cream ice cream with a hint of cinnamon, fresh blueberry compote, and chunks of sweet and savory cream cheese pie crust.  You won’t be running for the ice cream truck with a pint of this in your freezer!  Check out how easy it is to throw together……..  Well the bad news is, it is Mother’s Day weekend and my guys are once again away at school.  The good news is, this recipe makes 10 hand pies and there’s only one of me!!!  This is a perfect Saturday morning recipe.  It is quick and easy and amazing in flavor!  I love, love, love blueberries!  And I will be using them a lot as spring turns into summer.

But this recipe is simple and  delicious!  The pies are incredibly light given the buttery, flaky crust and the amount of blueberries and cream cheese packed inside of them.  They come together quickly, but the end result is something pretty special.  I hope you will give them a try and feel free to mix and match berries and liqueur.  Yum!
