Chocolate and Irish Cream Cupcakes | From My Sweet Heart

The only quarrel that will likely start over these pretty black and white Irish Cream cupcakes is who will get the last one!  Buttermilk is one of the key ingredients in these light and airy cupcakes.  In baking, buttermilk reacts with baking soda to give your product a light texture and also prevents your baked goods from browning too quickly.  A huge thank you to Roxana, of Roxana’s Home Baking; and the founder of The Chocolate Party for pairing chocolate with buttermilk this month!  And since I am a year round fan of Bailey’s Irish Cream, I knew that I would be making these buttermilk cupcakes.  They are soft and light in texture, with a mellow chocolate flavor; but the Irish Cream is everywhere in this recipe. Home Made Irish Cream

  • 1 can (14oz) sweetened condensed milk
  • 8 ounces of heavy cream
  • 4 eggs
  • 16 ounces of Irish whiskey (I used Jamesons)
  • 2 ounces of espresso
  • 1 ounce of chocolate syrup
  • 1 teaspoon of pure vanilla extract
  • 1/4 teaspoon of almond extract

Beat the condensed milk, cream and eggs in a glass bowl.  Place the bowl over a pan of simmering water and continue to gently whisk until the mixture reaches 160°F on your thermometer.  The mixture should also lightly coat the back of a metal spoon.  Remove this from the heat and let it cool to room temperature.  Add the whiskey, coffee, chocolate syrup, vanilla and almond extracts.  Stir well.  This recipe makes about 1 1/4 quarts, but since it is fresh, it must be stored in the refrigerator.  It will keep for up to 1 month. 

Again, I’d like to tell you about one of my thrifty finds.  I’m not of Irish heritage, but I couldn’t resist scooping up these sweet, little shamrock glasses that I found at the thrift store for 50 cents each!  And that really old, green flask…my dad found that in the Boston Harbor over 40 years ago!

Warm Irish Cream Shots

Warm Irish Cream Shots | From My Sweet Heart

  • 1/4 cup of Bailey’s Irish Cream
  • 2 Tablespoons of Kahlua
  • 1/2 cup of heavy cream
  • 1/4 cup of milk

Warm all ingredients over low heat in a small saucepan.  Pour into shot glasses.   Serve with palmiers (recipe to follow a little later.)  But here is a great and easy recipe to make your Irish Cream from scratch.

Well…..we are going on 4 days straight of down pouring rain here in D.C.   I know there are some areas of the country that are in desperate need of rain and I wish we could have shared ours with you!  But this happy hour, I thought it appropriate to drink something sweet and warm and comforting.  And this creamy little shot (or 2 or 3!) were just that!
