Peanut Butter and Jelly Ice Cream

YES!  Peanut butter and Jelly in ice cream!  Because…..it’s Kitchen Improv!

I took a short break and some much needed time to catch my breath; and I wasn’t sure I’d be able to participate in this month’s challenge.  But I just love this group.  And I couldn’t resist!  And so I admit…..I kept it simple for myself this month.  SIMPLY DELICIOUS and almost addictive!  Thanks so much to Kristen from the Frugal Antics of a Harried Homemaker for being the wonderful hostess for such a great group of food fanatics!  I am looking forward to seeing what everyone did with our two key ingredients this month….peanut butter and jelly!  These ingredients were likely suspects for an ice cream because not only do I like my ice cream sweet…..but oddly, I prefer it salty, too!  My PB & J’s are always made with my favorite, strawberry jam, and it’s so easy to make from scratch.  Come try this!  It’s rich, creamy, sweet and salty.  And it couldn’t be easier….. Cappuccino Crunch Ice Cream

I love my coffee with lots of cream.  Actually, to say I like a little coffee with my cream may be more accurate!  But to pour my coffee flavored cream in an ice cream maker and then freeze it…..now that is something!  I love this cappuccino ice cream.  Just a hint of cocoa and cinnamon give it depth and richness.  And chopped chocolate covered coffee beans and bittersweet chocolate pieces lend a sweet, soft crunch to this cool creamy treat!  So good as an after dinner treat.  But I can hardly wait to…… [Read more...]

Pink Grapefruit and Pomegranate Sorbet

Pomegranate seeds, like pretty polished rubies, add such a special flair to just about anything you add them to!  This tartly sweet sorbet is a perfect example.  If I made a dinner in which I needed a palate cleanser between courses, I would most definitely serve this.  You will taste more of the tart pucker of the grapefruit juice.  But there is a slightly sweet hint of the pomegranate.  And of course, the special, delicate crunch of nature’s perfect little jewels!  This is by far, the most refreshing sorbet I’ve ever had.  And if like me, you are not in the habit of serving 7 course meals, this would definitely be the perfect sparkle to the end of any meal!  And speaking of sparkle……. Toasted Mochalaska

Well I decided what to do with the leftover coffee ice cream from the Baked Sunday Mornings.  As you may recall, I felt that the ice cream had an unusual, but tasty, salty quality to it.  So I felt pairing it with something sweeter might help round it out a bit.  And what better sweet thing than chocolate!  The traditional baked alaska is such a ’50s dessert.  But sometimes nostalgia is a good thing if we can put a slightly new twist on it.  So I decided to use brownies studded with toffee bits in place of cake.  And coffee ice cream covered in sweet meringue that is not baked, but toasted with my kitchen blowtorch!  (I’ve been dying to pull that out again).  You know…this can be a quick weeknight dessert by using your favorite bakery or store bought brownie; and your favorite flavor of ice cream from your grocer’s freezer.  (I sound like a commercial here!)  And all you would have to do is whip up the meringue and torch it.  All in all….a pretty quick assembly.  But here’s what to do if you want to make this yummy treat from scratch….. Coffee Ice Cream

BAKED SUNDAY MORNINGS:  COFFEE ICE CREAM

So I joined a baking group called Baked Sunday Mornings.  The members of this group will post a featured recipe from the wonderful cookbook, Baked Explorations, by Matt Lewis and Renato Poliafito.  Ironically, the first baking assignment is Coffee Ice Cream!  Which is okay in my book because I happen to LOVE coffee ice cream.  And I needed to make this for another recipe I will be posting later in the week.

This coffee ice cream is different from the one I usually make because I don’t often use an egg base in my ice cream. I did like the creaminess of this ice cream.  But I should have listened to my gut regarding the amount of salt this recipe called for.  While I usually add a pinch or more, depending on the flavor I am creating….this recipe called for an entire teaspoon!!!  So while there is a nice coffee flavor (Kahlua is added!)….it almost took on a smoky, salted caramel quality. Unusual….but in a good way.  The recipe can be found soon on Baked Sunday Mornings.  I have been wanting to own this cookbook for some time.  And so I was very happy for the ‘excuse’ to have to purchase it!  This group will feature a new recipe to be posted every other Sunday.  And after perusing the many wonderful recipes from this book, I am definitely looking forward to many future posts!

Banana Split Ice Cream Bread

Well it’s been a rough week for me as I have found myself off my feet most of the time with a knee injury.  And since it’s been impossible to hobble around the kitchen on my crutches, I decided to make life easy for myself and post another installment of I’ll Have What She’s Having…!  This particular recipe is for Ice Cream Bread.  And it couldn’t be easier.  Because all you do, literally, is mix together your favorite ice cream with some self rising flour.  Into a bread pan and into the oven.  And just under an hour later you have a moist, sweet, delicious bread.  And that’s that!  And with so many ice cream flavors and combinations for mix ins, you could probably make this bread a hundred times and never have the same bread twice!

I chose to use some Ben & Jerry’s Banana Split ice cream (strawberry and banana ice cream with walnuts, fudge chunks, and fudge swirl); and I added some additional walnuts and coconut for some mix ins!  Of all the baking I do, honestly, breads and muffins are not exactly my strengths.  So I am scratching my head on how I have this perfect bread sitting on my kitchen counter!

This recipe comes from Maranda at Jolts & Jollies.  While this is not a new blog, it is new to me.  And I’m not quite sure how I stumbled upon it.  But I’m glad I did!  I don’t know Maranda personally, but she seems like a lovely, warm and compassionate person.  She shares many wonderful recipes from main dishes to desserts.  But as you might have expected….it’s her cakes and sweets that have caught my eye!  And when you pop over to her site for this recipe, you will see why!  Maranda has such a great variety of recipes, with clear cut instructions and wonderful photos!

Pistachio, Strawberry & Vanilla Semifreddo

 I just love this quote!  It rings so true for me.  But the other three things it takes for me to be happy are pistachio, vanilla and strawberry!  I know it’s not the classic trio of flavors, but I would gladly trade chocolate for pistachio anytime!  I think ice cream is easier to make than a semifreddo (of course….because my ice cream maker does all the work!)  But I must admit it is satisfying to make a frozen treat by hand.  And this is definitely a much lighter version of ice cream.  Not at all difficult to make.  Just need a little patience and waiting time between layers.  But what a pretty presentation….. Blueberry Pie Ice Cream

This is so far the BEST  ice cream I have ever tasted in my life!  I love it because it truly is a great combination of pie and ice cream.  I’ve seen other recipes include graham crackers in their version of ‘pie ice creams’.  But pie to me, is crust, not crackers.

This ice cream has all the components of pie a la mode.  Sweet cream ice cream with a hint of cinnamon, fresh blueberry compote, and chunks of sweet and savory cream cheese pie crust.  You won’t be running for the ice cream truck with a pint of this in your freezer!  Check out how easy it is to throw together…….. Sweet Cream Ice Cream

I know what you are thinking.  Vanilla ice cream?  Really?  How exciting can that be???  But sometimes you just have to start with the basics.  And this sweet cream ice cream is the perfect canvas for so many creations.  There is basically nothing much else in this ice cream but cream and sugar.  In the picture, I’ve topped it with some Himalayan Pink Salt.  (Yes….call me crazy, but I LOVE salt on my ice cream!!!)  And since temperatures reached the low 80′s here in Washington, D.C. today, it seemed like a good way to end my day.  I promise that soon, this sweet cream ice cream will make another NOT SO INNOCENT appearance!!!  Be on the lookout and read on for the recipe, and to see how I jazzed it up today.
