Starfruit with Ginger Thyme Syrup

“FOR MY PART I KNOW NOTHING WITH ANY CERTAINTY, BUT THE SIGHT OF THE STARS MAKE ME DREAM.”  Vincent van Gogh

You may find it ironic that I write a dessert blog when I tell you that I am a former Weight Watcher!  What I have learned over time, about myself, is that over eating was never about hunger.  And for me to lose weight was a matter of eating less and moving more.  And to maintain good weight and good health, I need to eat well, eat the right things, and indulge in moderation.  But my passion for baking rarely allows me to cut corners and I always try to use the best ingredients to achieve the best product.

But there are two women that I have met through blogging, that have really had a great influence on my thinking.  Kelly at Inspired Edibles is a registered nutritionist whose blog teaches me that you can use whole, natural and simple ingredients and still turn out fabulous healthy food and treats!  When I am visiting her blog, and see her posts for desserts and snacks, I am in awe of how fantastic they look, how full of flavor they are, and how good they are for you!

Ann at Cooking Healthy for Me, is also truly amazing.  She posts an array of dishes and desserts, that are healthier alternatives and lower in calories; yet again, they are beautiful and vibrant and don’t compromise flavor.  And Ann is also of the mindset that indulgences are okay, you just need to keep them in check.

I’ve been blessed to have so many friends who support me in writing this blog, even though their approach to their own blogs may be so very different.  And I’ve come to accept that my type of blog is very much like the scene of a hit and run!  People stop by to find something they may need, but it’s not necessarily a site you come to visit every day!  And so I hope that mine will be a blog that people will feel comfortable visiting when they are looking for a special indulgence of their own.  But I’ve decided to add a section to my offerings for those who may wish to dance a little on the lighter side of the sweet.  And I am kicking it off today with this simple, easy, delicious and low calorie dessert.  I’m very excited about this and I hope you will be, too…… [Read more...]

Farmstand Fruit Coffee Cake

“LET US LEARN TO APPRECIATE THERE WILL BE TIMES WHEN THE TREES WILL BE BARE, AND LOOK FORWARD TO THE TIME WHEN WE MAY PICK THE FRUIT.”  Anton Chekhov

No!!!  This is NOT fruitcake!  It is a delicious cake that really can house any fruit , in any season, from your local farm stand.   I don’t really care for ‘coffee cake’.  While I appreciate a cold glass of milk with chippers warm from the oven, or a sweet crispy biscotti to dunk in my latte….I don’t really enjoy a baked good that requires a beverage just to get it down!  And that has been my experience with most coffee cakes in the past!  But not this one!  Incredibly moist and luscious.  I chose to use peaches this time.  But berries or apples….or any other fruit in season would be amazing, too!  Do you know what I found interesting about the cinnamon-sugar mix in this recipe?  It includes…… [Read more...]

Peaches and Cream Brulee

“LIFE IS BETTER THAN DEATH, I BELIEVE, IF ONLY BECAUSE IT IS LESS BORING, AND IT HAS FRESH PEACHES IN IT.”  Alice Walker

You like peaches, right?  I thought so!  And how about creme brulee?  YES!  Me, too!!!  So it’s inevitable…..they have to come together!  Oh friends…..I will never ask another thing of you if you just promise me you will try this once!  You will be hooked!  Two simple flavors come together to create such a sweet medley in your mouth.  Just get yourself some of these fresh, ripe beauties…..mix a simple custard on the stove.  A sprinkling of sugar….and a little carmelization!  This is going down as one of my all time favorite summer desserts!   Wait till you see what it looks like when you start scooping!!!…… [Read more...]

Honey Figs with Sweet Mascarpone Cream

“BUILDING A DESSERT ON AN UNLIKELY FLAVOR CAN ALSO BE RISKY BUSINESS.  IF IT’S WARM AND CHOCOLATE, IT’S NIRVANA FOR MOST PEOPLE.  BUT I CAN’T GIVE AWAY PRUNE DESSERTS.”  Claudia Fleming

Claudia Fleming is an amazing pastry chef from New York City.  But I think I know how she feels!  From birthday cakes to figs!  Will I have any takers???   But you know, sometimes a sweet treat, for me,  is as simple as a fig.  I imagine this is a fruit that one loves or hates….or feels ambivalent about!  But for me….I LOVE them.  And while I love them fresh and unadulterated; when I cook them….I always enjoy adding a savory component like mascarpone cheese.  Even so…it makes for a very light dessert (or breakfast or lunch even!)   Let me tempt you with a pretty plate of them……. Iced Berries in Warm White Chocolate Cream

“SIMPLICITY IS THE ULTIMATE SOPHISTICATION.”  Leonardo DaVinci

Sometimes the simple pleasures are the best.  And there are some things in their natural form that just can’t be improved upon.  Like biting into a peach on a hot summer day and feeling the juice trickle down your chin onto your favorite white tee shirt!

Well sometimes in the middle of the week, you need a pick me up.  A dessert which feels a little more special than a bowl of berries, but which doesn’t take a lot of time.  This treat is sublime!  From the joyous clink of the berries, like ice cubes, into the glass….to the sweet rich cream which bathes and warms them back to their soft, sweet state.

I hope you will try this.  The possibilities for variation are many!  Switch up your chocolate, or berries, or add spice or liqueur.  Just kick back, relax and enjoy!

And the recipe along with a picture of my favorite flower…..follows…… [Read more...]
