Raspberry White Chocolate Mousse

One of the things I love the most about The Secret Recipe Club is that it allows me the possibility to make something I’ve been wanting to try, but haven’t, simply because I haven’t been able to find the best recipe yet.  For example…..mousse.  There are a million recipes out there for chocolate mousse, all quite different, but all basically the same, you know?  So when I first looked at Tina’s blog, Mom’s Crazy Cooking…..I quickly found this recipe for White Chocolate Mousse and I knew it was what I wanted to make!  Tina has one of those fabulous blogs that just makes you smile when you come upon it! And though I found this right away, each visit back had me second guessing my decision!  Tina recently posted recipes for Chocolate Orange Brownies with Orange Cream Cheese Icing; and Carrot and Zucchini Bars with Lemon Cream Cheese Frosting that I absolutely can’t wait to try!  And she has many scrumptious looking recipes and ideas for dinner.  (Her recent recipe for Slow Cooker Orange Chicken is on my to do list for this week!).  But back to this mousse.  It is divine!  The one thing I liked about this recipe is that the white chocolate custard, before all the whipped cream is folded in, would make an amazing pastry cream!  I made 2 batches of this luscious stuff.  One I kept the traditional white mousse, and to the other, I added….. Peach Souffle with Cinnamon Creme Anglaise

I AM NOT AFRAID OF SOUFFLES!  But the sad reality is…..they don’t stay poofed up forever!  I LOVE to make souffles.  And I LOVE to eat souffles.  But I’ve never had to photograph them before!  I had everything prepped in advance for the ‘photo shoot’.  But I gotta tell ya….next time I will take a picture of them before I even take them out of the oven!  Because once that oven door opens…..it’s a mad dash against time and gravity!  And the other reality is…..even as they deflate…..they are delicious!  This one, made with peaches, was light and airy and subtly sweet.  And the twist about this recipe is……. Mikey’s Favorite Creamy Peanut Butter Pie

 There is no greater pain than being happy and in love with someone one day, only to find them gone from your life the next.  A fellow food blogger, Jennifer at In Jennie’s Kitchen, lost her husband suddenly and unexpectedly. And my heart goes out to her and her family during this difficult and painful time.  My son Matt, who is only 20, attended his second funeral of the summer 3 days ago.  And so while I am struggling with trying to make sense of it all…..of life, and love, and loss……I can only imagine the devastation that Jennifer is dealing with.  I pray that she will find the strength and support that she needs.  And I wish her and her family peace in the coming days.  Actually…..I wish this for all of us.

Jennifer asked that others show their support by making her husband Mikey’s favorite pie…..Creamy Peanut Butter Pie.  And while this post is a couple of days late….I wanted to show my support for Jennifer and for a whole community of wonderful people, who have always come together in support of one another….and who have personally helped me along the way.

I never imagined that I would find so many friendships through food blogging, and that it would change my life in such a profound way.  And I love you and thank you all.

Key Lime Pie Martini

2 oz vanilla vodka

1 oz coconut rum

1 oz key lime juice

1 oz heavy cream

Fill your cocktail shaker 2/3 way with ice cubes.  Add all ingredients and shake well.  Pour into a martini glass.  Garnish with a lime twist or wedge and finely crushed graham crackers ( or rim the glass with crushed grahams mixed with sugar).  

Today I was rescued!  So I’d like to make a toast to my son, Jeff, who came to my aid.  But also to the really kind gentleman from AAA who replaced my car battery in the middle of an unshaded parking lot at high noon in 103° heat!!!

Summer Corn Custard with Blueberry Compote

Every season has its harvests.  To me, summer seems to have the best!  And I think this is true in both flavor and variety.  So I wanted to share a recipe that combines two of my very favorites from the summer produce stand……corn and blueberries!   I love corn on the cob, I just don’t like to eat corn on the cob! (At least not in public! Ha!)  But I love when the corn is so sweet, you really don’t need to put butter on it.  (But I do, anyway!)  Well this custard is lovely, because you don’t grind the corn, you infuse it in with your vanilla cream!  Sounds good so far?  Wait….it gets even better…….  HAPPY MEMORIAL DAY!!!

This is an exciting day for 2 reasons.  The first is that my son, Jeff, left this morning as part of a group of meteorologists, who will be storm chasing in the midwest.  I am not sure where he will be over the next couple of weeks yet, but I pray that he will stay safe while having the experience of a lifetime.  The second is that I got to use my new kitchen blowtorch!  Very cool.  And much easier than trying to put something under the broiler while watching it carefully!

THESE S’MORES ARE YUMMLY!!!  You really do get all your favorite, familiar flavors from a S’more…the buttery graham cracker crust, a very decadent, creamy, chocolate center, and a light, sweet, marshmallowy top.  It’s just a little more sophisticated.   Oh, and let me tell you about the booze…… [Read more...]

Chocolate Risotto

Sweet Cream Ice Cream

I know what you are thinking.  Vanilla ice cream?  Really?  How exciting can that be???  But sometimes you just have to start with the basics.  And this sweet cream ice cream is the perfect canvas for so many creations.  There is basically nothing much else in this ice cream but cream and sugar.  In the picture, I’ve topped it with some Himalayan Pink Salt.  (Yes….call me crazy, but I LOVE salt on my ice cream!!!)  And since temperatures reached the low 80′s here in Washington, D.C. today, it seemed like a good way to end my day.  I promise that soon, this sweet cream ice cream will make another NOT SO INNOCENT appearance!!!  Be on the lookout and read on for the recipe, and to see how I jazzed it up today.
