Toasted Mochalaska

Well I decided what to do with the leftover coffee ice cream from the Baked Sunday Mornings.  As you may recall, I felt that the ice cream had an unusual, but tasty, salty quality to it.  So I felt pairing it with something sweeter might help round it out a bit.  And what better sweet thing than chocolate!  The traditional baked alaska is such a ’50s dessert.  But sometimes nostalgia is a good thing if we can put a slightly new twist on it.  So I decided to use brownies studded with toffee bits in place of cake.  And coffee ice cream covered in sweet meringue that is not baked, but toasted with my kitchen blowtorch!  (I’ve been dying to pull that out again).  You know…this can be a quick weeknight dessert by using your favorite bakery or store bought brownie; and your favorite flavor of ice cream from your grocer’s freezer.  (I sound like a commercial here!)  And all you would have to do is whip up the meringue and torch it.  All in all….a pretty quick assembly.  But here’s what to do if you want to make this yummy treat from scratch….. Macadamia Nut Double Decker Brownie Bites

Since the start of summer, I’ve been so caught up in the excitement of summer’s wonderful fresh fruits and berries.  Watermelon, blueberries, cherries, peaches….so much to choose from!  And every month I will always highlight a fruit in season and feature that fruit in many of my creations.  But today, the fruit in season for me was CHOCOLATE!  Not sure if it was the overcast and  rainy day here in D.C, but  I simply had to have something warm, gooey and chocolatey!  And these little bites filled with fudge, coconut, brown sugar and macadamia nuts (no….that is not my tooth in the picture….these little gems are too moist!)….. just hit the spot.  Do you know what made this recipe particularly easy?….. Heart of Darkness Brownies

 Well I think these brownies are very appropriately named.  And very much suited to the state of my own heart these days.  You see, I’m in a spell of very bad kitchen karma.  My strawberry tart, though incredibly delicious, didn’t hold up very well.  And today, while making these brownies, my lower oven was set to 350°; while my upper oven somehow was set to 450°.  So you can imagine the fate of one set of brownies!  And….in between batches, my power went out!!!  I think the kitchen gods are trying to tell me something.  Or maybe I think that my own heart has been a little heavy these past few days and so I am feeling a bit distracted in the kitchen.  Anyway…. I decided to abandon the strawberries in lieu of these incredible, moist, chewy, fudgey delights!  And believe me…..this was just what my poor heart of darkness needed.  You cannot believe what is in these!!!  But read on to understand why they will lift you out of your own dark place…….
