Pavlova with Spiced Pears & Blackberries

I’ve been been wondering what the fascination is with pavlovas.  While I’ve only had store bought meringues before, I found them to be hard and crunchy, and not really in a good way!   So this recipe only affirms my belief that when you take the opportunity to make something from scratch, the result is so much better!  The fascination with pavlovas?  They are sweet, crunchy, chewy clouds on which you can float the most delectable fruits and creams!  They may be elegant or rustic, and topped with fruits from any season.  Nervous about making meringues?  So was IBut let me tell you about one of my favorite Cooking Channel shows, and who convinced me to give this a try…… [Read more...]

Agave Negro

 2 blackberries (plus another for garnish)

1 cup ice

1 1/2 oz Cazadores Reposado Tequila

3/4 oz freshly squeezed lime juice (lime slice for garnish)

3/4 oz Simple Syrup

1/2 oz Chambord

1 oz chilled club soda

In a cocktail shaker, muddle the 2 blackberries.  Add ice, tequila, lime juice, simple syrup, and chambord.  Shake well.  Pour into a rocks glass.  Stir in the club soda. Garnish with skewered blackberry and lime wheel.

 

I meant to get this up for a happy hour post on Friday.  It is AMAZING what a difference fresh ingredients play in something so simple as a cocktail.  This is a very refreshing summer cocktail.  The flavor of those 2 little blackberries really shines through.  I hope you enjoy this while listening to a clip from one of my very favorite artists……Jamie Cullum.




 

Berry Basil Ice Cream

B is for BASIL

 

Well this is the second post in my series “My Spice Rack from A-Z”.  This month, I had to choose a spice beginning with the letter B.  Not sure what is in your spice rack that would fit the bill.  But I had bay leaves and basil!  While I cook enough times with both spices, I’ve never created a dessert with either.  Inspired by a poem by Keats, I chose basil!

I searched online a bit, and most recipes matched basil with lemon, and usually in a panna cotta.  I decided to keep it simple and basic and I made some ice cream.  I made it a bit differently than I usually do.  And I wonder if those of you who make ice cream can tell me the difference……….
