Roasted Banana Chocolate Chip Muffins

It’s once again time for The Secret Recipe Club reveal!

This is my second month in The Secret Recipe Club.  I really enjoy the opportunity to be introduced to new blogs and bloggers.  And while I am always bookmarking recipes with the best intentions of making them, this is the perfect way to finally start making something new!  I have to give a huge thanks to Amanda from Amanda’s Cookin for creating such a wonderful group.  And I’d also like to thank Angie from Big Bear’s Wife for being our group’s fabulous and fearless leader!

I am not the best muffin baker in the world.  And so I was lucky to be assigned to Our Eating Habits.  Because there I found a recipe for something I have been wanting to make for some time now….a terrific Banana Chocolate Chip Muffin!  Actually, the minute I began searching all of Jamie’s wonderful recipes, I realized I had been there before.  I had commented in the past on some of her Friday Night Movie posts, where she shares fabulous recipes for pizza and snacks that she and her family make on their movie nights.  But it was these beauties that caught my eye!

I changed it up slightly because I didn’t think my bananas had ripened enough and I made an interesting little streusel topping.  But I thank Jamie for the inspiration and recipe for this delicious muffin……

Don’t they look scrumptious?!  The only changes I made to Jamie’s recipe was that I peeled and sliced the bananas into chunks, and roasted them in a 400°F oven for about 20 minutes to get them softer before I mashed them.  And although I roasted 4 bananas, it only made 1 cup of puree instead of the  1 1/2 cups the recipe called for.  So I diced another banana into little pieces and added 1/2 cup of those to the recipe as well.

Another interesting feature of this recipe is that it called for 2 Tablespoons of cocoa powder, which made it more like a chocolate banana chocolate chip muffin.  So if you want to be a banana chocolate chip purist, you could leave out the cocoa.  I also added a streusel topping…..


I just combined 1/3 cup of pulverized banana chips, 1/3 cup of light brown sugar and 1/3 cup of mini semi sweet chocolate chips with 3 TBSP of melted butter and sprinkled it on top before baking.  I used a 375°F oven and baked it just 5 minutes longer than the original recipe.

  16. Glad to be in SRC with you, Anne! Love these muffins…I think one of my 2012 blog resolutions should be to make more muffins since I don’t make them often for some reason! I love roasting bananas. I made a roasted banana bread for my blog last year, and I loved how it brought out even more sweetness in the bananas.
