Iced Berries in Warm White Chocolate Cream

“SIMPLICITY IS THE ULTIMATE SOPHISTICATION.”  Leonardo DaVinci

Sometimes the simple pleasures are the best.  And there are some things in their natural form that just can’t be improved upon.  Like biting into a peach on a hot summer day and feeling the juice trickle down your chin onto your favorite white tee shirt!

Well sometimes in the middle of the week, you need a pick me up.  A dessert which feels a little more special than a bowl of berries, but which doesn’t take a lot of time.  This treat is sublime!  From the joyous clink of the berries, like ice cubes, into the glass….to the sweet rich cream which bathes and warms them back to their soft, sweet state.

I hope you will try this.  The possibilities for variation are many!  Switch up your chocolate, or berries, or add spice or liqueur.  Just kick back, relax and enjoy!

And the recipe along with a picture of my favorite flower…..follows……

I LOVE peonies!  They are so full and fluffy and frilly!  I can usually only find them in July.  But I found these on my last trip to Trader Joe’s and couldn’t resist.

So….

4 cups of mixed berries, frozen

1 c ghirardelli white chocolate chips

2 c heavy cream

Put 4 cups of mixed berries in a baggie and place in freezer for a day.  You want them frozen like ice cubes!

Set the white chocolate chips and the cream in a bain marie. (Saying bain marie makes it feel more special than saying place the white chocolate chips and cream in a bowl over a saucepan of simmering water being careful not to let the bottom of the bowl touch the water!)  Whisk until combined and smooth.  Place your berries in a tall glass (enjoy the clink!) and pour the warm cream over the berries.

ENJOY!

P.S…..I initially tried this recipe using 1 cup of cream to 1 cup of white chocolate chips.  This makes a thicker, sweeter cream.  But sometimes I just like cream on my berries, so I used 2 cups of cream to 1 cup of white chocolate chips and it’s a milder sweetness and not quite as rich.  Both are good….just a matter of preference!

    Yummy! That looks good!

  5. You’re right, bain marie gives it that certain je ne sais quoi…. not that this tumbler full of yum needs it!

What an interesting treat. It actually looks like bubble tea in that last photo. I imagine this is delicious. I hope you have a great day. Blessings…Mary

  7. This treat looks delicious and decadent. I would have to eat it in a bowl because I would want to get every bit of that cream (even if I had to use my finger to scrap it off). : ) I love peonies too. They are so feminine and pretty. I hope you have a wonderful and safe Memorial Day weekend…make one of these delicious desserts and kick your feet up and enjoy. : )
