Another delicious recipe from BAKED SUNDAY MORNINGS! These cookies are not just for the holidays anymore. A nice, light minty chocolate cookie filled with peppermint white chocolate. I ran out of clear rolling sugar so I improvised with some colored sugar, non pareils and chocolate jimmies (that’s what we call chocolate sprinkles in New England!) These are easy and fun to make. Since the recipe calls for you to press your ‘thumbprint’ twice; once halfway through the baking!!!….I decided to use the rounded edge of the handle of one of my whisks. And I really think you could adapt both the cookie and the filling to accommodate any occasion. Leave out the minty flavor and use coffee or raspberry or rum; add the same flavors to the filling or use dark chocolate ganache or caramel! The variations for flavors and decorations are endless! On a scale of 1-5, I am giving this 4 whisks!

NOTE: The original recipe says it will make 40 cookies. It called for TBSP sized balls. I used a TBSP to scoop the amount of dough I needed and then rolled it into a ball. My batch only made 30 cookies. Also, the original recipe called for half of the ingredients I used for the filling. And even though it claimed to make more cookies….the original filling wasn’t enough to fill my 30 cookies. So I doubled it in this recipe.

Ooooo, I love this, Anne! I make thumbprints every year and what I make makes a big batch. I spend time every year trying to think of a way to fill some of them with something besides jam. I think I’ve found it now. Yay Anne!!

My mom made the betty crocker thumbprint cookies every Christmas. I’ve never tried the chocolate and mint version, but if they sound half as good as I imagine them to be, they’d be completely and utterly irresistible. Fantastic recipe!

I’m not usually a big fan of mixing chocolate and mint. I’m one of the few people that doesn’t love girl scout thin mints or mint chocolate chip ice cream. However, I have to admit I really enjoyed these cookies. The mint flavored filling was mild and tasted great. You have a winner Anne.
