Lemon Bites

Well it is once again time for The Secret Recipe Club reveal!   I had the great pleasure of being assigned to The Kitchen Witch this month!  I felt immediately at home in Rhonda’s place!  She writes with spunk and humor.  And with the exception of the fact that I have never been on a Harley, I could relate to so much in her blog.  Her recipes run from rustic to elegant and she has quite a nice variety.  Many of her recipes have points values (I am a former weight watcher)!  And when I read her post on jello salad, I found myself grinning from ear to ear.  We definitely grew up in the same era where jello was THE dessert of the times.  So funny!  And as I perused her scrumptious selection of recipes, naturally looking for the perfect dessert or baked good, I came across a post that I could relate to more than any other!

Rhonda called it …..Lemon Bites: A Tasty Failure.  And I thought….wow….I love this woman.  Because this time last year I had a similar post.  A strawberry lemon tart I made that had a meltdown but was the most delicious thing I’ve ever tasted, despite the fact that you had to eat it with a spoon.  But Rhonda, like me, had a vision.  And her vision was for a little puffed pastry filled with lemony curd and topped with whipped cream.  And though it didn’t turn out exactly as she expected, she loved how they tasted.  So with a bit of Rhonda’s determination, and the luck of a ‘kitchen witch’ on my side, I decided to go for it.  And this is what happened….. Raspberry White Chocolate Mousse

One of the things I love the most about The Secret Recipe Club is that it allows me the possibility to make something I’ve been wanting to try, but haven’t, simply because I haven’t been able to find the best recipe yet.  For example…..mousse.  There are a million recipes out there for chocolate mousse, all quite different, but all basically the same, you know?  So when I first looked at Tina’s blog, Mom’s Crazy Cooking…..I quickly found this recipe for White Chocolate Mousse and I knew it was what I wanted to make!  Tina has one of those fabulous blogs that just makes you smile when you come upon it! And though I found this right away, each visit back had me second guessing my decision!  Tina recently posted recipes for Chocolate Orange Brownies with Orange Cream Cheese Icing; and Carrot and Zucchini Bars with Lemon Cream Cheese Frosting that I absolutely can’t wait to try!  And she has many scrumptious looking recipes and ideas for dinner.  (Her recent recipe for Slow Cooker Orange Chicken is on my to do list for this week!).  But back to this mousse.  It is divine!  The one thing I liked about this recipe is that the white chocolate custard, before all the whipped cream is folded in, would make an amazing pastry cream!  I made 2 batches of this luscious stuff.  One I kept the traditional white mousse, and to the other, I added….. Sugared Donut Muffins

Well after a month long hiatus, it’s once again time for the much anticipated Secret Recipe Club reveal!  I love this group because it allows me to bake the things I drool over when looking at every one else’s blogs!  First, a word of gratitude to Amanda, from Amanda’s Cookin’ for creating and organizing this amazing group.  It really is a wonderful concept!  And another thank you to Angie of Big Bear’s Wife, who is the fabulous leader of my group!  And as my great luck would have it, I also had the pleasure of being assigned to Angie’s blog this month!  And what a treat this was!  She has a variety of scrumptious recipes from appetizers to main dishes and everything in between!  But as you may have guessed….I went for a little something sweet!  I made a couple of changes, based on necessity.  So come take a closer look….. Roasted Banana Chocolate Chip Muffins

It’s once again time for The Secret Recipe Club reveal!

This is my second month in The Secret Recipe Club.  I really enjoy the opportunity to be introduced to new blogs and bloggers.  And while I am always bookmarking recipes with the best intentions of making them, this is the perfect way to finally start making something new!  I have to give a huge thanks to Amanda from Amanda’s Cookin for creating such a wonderful group.  And I’d also like to thank Angie from Big Bear’s Wife for being our group’s fabulous and fearless leader!

I am not the best muffin baker in the world.  And so I was lucky to be assigned to Our Eating Habits.  Because there I found a recipe for something I have been wanting to make for some time now….a terrific Banana Chocolate Chip Muffin!  Actually, the minute I began searching all of Jamie’s wonderful recipes, I realized I had been there before.  I had commented in the past on some of her Friday Night Movie posts, where she shares fabulous recipes for pizza and snacks that she and her family make on their movie nights.  But it was these beauties that caught my eye!

I changed it up slightly because I didn’t think my bananas had ripened enough and I made an interesting little streusel topping.  But I thank Jamie for the inspiration and recipe for this delicious muffin…… [Read more...]

Stuffed Sugar Cookies

Well this is my first assignment as a member of The Secret Recipe Club!  I think this is such a great way to learn about blogs that are new, at least to me, and to hopefully get some new ideas and make some new friends along the way.  This recipe comes from Meagan at A Zesty Bite.  She has a very eclectic recipe collection, from appetizers to entrees and everything in between.  Naturally, I chose something sweet!  Meagan featured a Stuffed Sugar Cookie recipe that she had stuffed with rolo candies.  I had some Ghirardelli Milk Chocolate and Caramel Squares that I wanted to incorporate into this recipe somehow.  So I made just a few changes.  I chilled the dough for about 15 minutes after making it to be able to roll it out to a square.  And because I was starting with a thinner cookie shape, I reduced my oven to 350°F and baked them about 5 minutes longer.  And to give a hint as to the luscious treat inside, I topped them with chocolate sprinkles before baking and then grated some chilled caramel candies onto them right when they came out of the oven!  Thanks to Meagan at A Zesty Bite for the inspiration and recipe to a really yummy sugar cookie!
