Peanut Butter and Jelly Ice Cream

YES!  Peanut butter and Jelly in ice cream!  Because…..it’s Kitchen Improv!

I took a short break and some much needed time to catch my breath; and I wasn’t sure I’d be able to participate in this month’s challenge.  But I just love this group.  And I couldn’t resist!  And so I admit…..I kept it simple for myself this month.  SIMPLY DELICIOUS and almost addictive!  Thanks so much to Kristen from the Frugal Antics of a Harried Homemaker for being the wonderful hostess for such a great group of food fanatics!  I am looking forward to seeing what everyone did with our two key ingredients this month….peanut butter and jelly!  These ingredients were likely suspects for an ice cream because not only do I like my ice cream sweet…..but oddly, I prefer it salty, too!  My PB & J’s are always made with my favorite, strawberry jam, and it’s so easy to make from scratch.  Come try this!  It’s rich, creamy, sweet and salty.  And it couldn’t be easier….. Coffee Ice Cream

BAKED SUNDAY MORNINGS:  COFFEE ICE CREAM

So I joined a baking group called Baked Sunday Mornings.  The members of this group will post a featured recipe from the wonderful cookbook, Baked Explorations, by Matt Lewis and Renato Poliafito.  Ironically, the first baking assignment is Coffee Ice Cream!  Which is okay in my book because I happen to LOVE coffee ice cream.  And I needed to make this for another recipe I will be posting later in the week.

This coffee ice cream is different from the one I usually make because I don’t often use an egg base in my ice cream. I did like the creaminess of this ice cream.  But I should have listened to my gut regarding the amount of salt this recipe called for.  While I usually add a pinch or more, depending on the flavor I am creating….this recipe called for an entire teaspoon!!!  So while there is a nice coffee flavor (Kahlua is added!)….it almost took on a smoky, salted caramel quality. Unusual….but in a good way.  The recipe can be found soon on Baked Sunday Mornings.  I have been wanting to own this cookbook for some time.  And so I was very happy for the ‘excuse’ to have to purchase it!  This group will feature a new recipe to be posted every other Sunday.  And after perusing the many wonderful recipes from this book, I am definitely looking forward to many future posts!

Blueberry Pie Ice Cream

This is so far the BEST  ice cream I have ever tasted in my life!  I love it because it truly is a great combination of pie and ice cream.  I’ve seen other recipes include graham crackers in their version of ‘pie ice creams’.  But pie to me, is crust, not crackers.

This ice cream has all the components of pie a la mode.  Sweet cream ice cream with a hint of cinnamon, fresh blueberry compote, and chunks of sweet and savory cream cheese pie crust.  You won’t be running for the ice cream truck with a pint of this in your freezer!  Check out how easy it is to throw together…….. Berry Basil Ice Cream

B is for BASIL

 

Well this is the second post in my series “My Spice Rack from A-Z”.  This month, I had to choose a spice beginning with the letter B.  Not sure what is in your spice rack that would fit the bill.  But I had bay leaves and basil!  While I cook enough times with both spices, I’ve never created a dessert with either.  Inspired by a poem by Keats, I chose basil!

I searched online a bit, and most recipes matched basil with lemon, and usually in a panna cotta.  I decided to keep it simple and basic and I made some ice cream.  I made it a bit differently than I usually do.  And I wonder if those of you who make ice cream can tell me the difference………. Sweet Cream Ice Cream

I know what you are thinking.  Vanilla ice cream?  Really?  How exciting can that be???  But sometimes you just have to start with the basics.  And this sweet cream ice cream is the perfect canvas for so many creations.  There is basically nothing much else in this ice cream but cream and sugar.  In the picture, I’ve topped it with some Himalayan Pink Salt.  (Yes….call me crazy, but I LOVE salt on my ice cream!!!)  And since temperatures reached the low 80′s here in Washington, D.C. today, it seemed like a good way to end my day.  I promise that soon, this sweet cream ice cream will make another NOT SO INNOCENT appearance!!!  Be on the lookout and read on for the recipe, and to see how I jazzed it up today.
