Ricotta Cheesecake with Blackberries

“WHO KNOWS HOW TO MAKE LOVE STAY?  TELL LOVE YOU ARE GOING TO THE JUNIOR’S DELI ON FLATBUSH AVENUE IN BROOKLYN TO PICK UP A CHEESECAKE, AND IF LOVE STAYS, IT CAN HAVE HALF.”  Tom Robbins

Ahhhhh!  If only love were so easy to bribe!  But would we really want it then?  For me, there were two reasons for wanting to make this cheesecake.  First, I saw a picture of it naked, in it’s purest form in an issue of Bon Appetit magazine.  And that was good enough for me.  It looked rustic, and simple and beautiful.  But….for some reason, last year, I developed a mad passion for blackberries.  And I wanted to add them to this delicious, creamy and crustless cheesecake.  I am in love with this cheesecake!  And I know it will last!  At least until the last bittersweet bite has consumed me….. Raspberry White Chocolate Mousse

One of the things I love the most about The Secret Recipe Club is that it allows me the possibility to make something I’ve been wanting to try, but haven’t, simply because I haven’t been able to find the best recipe yet.  For example…..mousse.  There are a million recipes out there for chocolate mousse, all quite different, but all basically the same, you know?  So when I first looked at Tina’s blog, Mom’s Crazy Cooking…..I quickly found this recipe for White Chocolate Mousse and I knew it was what I wanted to make!  Tina has one of those fabulous blogs that just makes you smile when you come upon it! And though I found this right away, each visit back had me second guessing my decision!  Tina recently posted recipes for Chocolate Orange Brownies with Orange Cream Cheese Icing; and Carrot and Zucchini Bars with Lemon Cream Cheese Frosting that I absolutely can’t wait to try!  And she has many scrumptious looking recipes and ideas for dinner.  (Her recent recipe for Slow Cooker Orange Chicken is on my to do list for this week!).  But back to this mousse.  It is divine!  The one thing I liked about this recipe is that the white chocolate custard, before all the whipped cream is folded in, would make an amazing pastry cream!  I made 2 batches of this luscious stuff.  One I kept the traditional white mousse, and to the other, I added….. Chocolate Orange Pots de Creme with Sugared Shortbread Spoons

“HAPPINESS.  SIMPLE AS A GLASS OF CHOCOLATE OR TORTUOUS AS THE HEART.  BITTER.  SWEET.  ALIVE.”  Joanne Harris (Chocolat)

Well, I have to give a shout out and a special thank you to Elle at Bromography for the reminder that today is National Pots de Creme Day!!!  Elle writes a wonderfully eclectic blog which features restaurant & food reviews, food facts, recipes and special features and events in her community!  Though she is based in NYC, I really enjoy reading her.  I think you will, too!  So while browsing her blog, be sure to check out her article about  National Pots de Creme DayWoo Hoo!  This is one holiday that I am more than happy to celebrate!

Today, I made  chocolate orange pots de creme.  It’s just a combination that I really enjoy.  (Chocolate and raspberries take a close second!)  I love these creamy pots so much!  They look like they have the texture of a cake.  A lovely cross between a custard and a souffle.  Deceptively creamy!  And very rich and soul satisfying!  Since I have this fetish for being able to eat every aspect of my dessert, I also made…….. Peach Souffle with Cinnamon Creme Anglaise

“THE ONLY THING THAT WILL MAKE A SOUFFLE FALL IS IF IT KNOWS YOU ARE AFRAID OF IT.”  James Beard

I AM NOT AFRAID OF SOUFFLES!  But the sad reality is…..they don’t stay poofed up forever!  I LOVE to make souffles.  And I LOVE to eat souffles.  But I’ve never had to photograph them before!  I had everything prepped in advance for the ‘photo shoot’.  But I gotta tell ya….next time I will take a picture of them before I even take them out of the oven!  Because once that oven door opens…..it’s a mad dash against time and gravity!  And the other reality is…..even as they deflate…..they are delicious!  This one, made with peaches, was light and airy and subtly sweet.  And the twist about this recipe is……. Peaches and Cream Brulee

“LIFE IS BETTER THAN DEATH, I BELIEVE, IF ONLY BECAUSE IT IS LESS BORING, AND IT HAS FRESH PEACHES IN IT.”  Alice Walker

You like peaches, right?  I thought so!  And how about creme brulee?  YES!  Me, too!!!  So it’s inevitable…..they have to come together!  Oh friends…..I will never ask another thing of you if you just promise me you will try this once!  You will be hooked!  Two simple flavors come together to create such a sweet medley in your mouth.  Just get yourself some of these fresh, ripe beauties…..mix a simple custard on the stove.  A sprinkling of sugar….and a little carmelization!  This is going down as one of my all time favorite summer desserts!   Wait till you see what it looks like when you start scooping!!!…… [Read more...]

Summer Corn Custard with Blueberry Compote

“AH, SUMMER, WHAT POWER YOU HAVE TO MAKE US SUFFER, AND LIKE IT.”  Russell Baker

Every season has its harvests.  To me, summer seems to have the best!  And I think this is true in both flavor and variety.  So I wanted to share a recipe that combines two of my very favorites from the summer produce stand……corn and blueberries!   I love corn on the cob, I just don’t like to eat corn on the cob! (At least not in public! Ha!)  But I love when the corn is so sweet, you really don’t need to put butter on it.  (But I do, anyway!)  Well this custard is lovely, because you don’t grind the corn, you infuse it in with your vanilla cream!  Sounds good so far?  Wait….it gets even better……. Sophisticated S’Mores

“I THINK EVERY WOMAN SHOULD HAVE A BLOWTORCH.”  Julia Child

 HAPPY MEMORIAL DAY!!!

This is an exciting day for 2 reasons.  The first is that my son, Jeff, left this morning as part of a group of meteorologists, who will be storm chasing in the midwest.  I am not sure where he will be over the next couple of weeks yet, but I pray that he will stay safe while having the experience of a lifetime.  The second is that I got to use my new kitchen blowtorch!  Very cool.  And much easier than trying to put something under the broiler while watching it carefully!

THESE S’MORES ARE YUMMLY!!!  You really do get all your favorite, familiar flavors from a S’more…the buttery graham cracker crust, a very decadent, creamy, chocolate center, and a light, sweet, marshmallowy top.  It’s just a little more sophisticated.   Oh, and let me tell you about the booze…… [Read more...]

Chocolate Risotto

“PUT EAT MORE CHOCOLATE AT THE TOP OF YOUR LIST OF THINGS TO DO TODAY.  THAT WAY, AT LEAST YOU’LL GET ONE THING DONE.”  Author Unknown

I have never attempted any type of risotto before.  But today, I awoke, literally with this recipe on my mind!  I have enjoyed writing this blog so much thus far.  I’ve enjoyed celebrating my son’s birthday, and paying homage to those who have helped me.  And I’ve been trying to put a variety of recipes up just to start to fill my categories.  But this week it’s Cinco de Mayo and then Mother’s Day.  And it appeared that this recipe was going to sit on the back burner once again.  I’ve been wanting to share it with everyone for some time.  And so today, it just seemed like  ‘it’s now or never’! Creme Brulee

“THE ONLY GIFT IS A PORTION OF THYSELF.” Ralph Waldo Emerson

This recipe post is in honor of my son.  It’s Jeff’s 22nd birthday today!  You know, as my boys were growing up, I’d always make them themed birthday parties with the corresponding themed cakes or cupcakes.  But as he grew older, I came to realize that Jeff really isn’t so crazy for cake.  Not even on his birthday!  And as he matured, so did his palate.  And his sweet tooth prefers strawberry crepes with chocolate hazelnut sauce, flan and creme brulee.  Thank goodness, because [Read more...]
