I’m toasting today to Ambrosia. That salad we all hate to love…but we love it anyway! Named as food for the gods. Will this milkshake turn back the years and give you ageless immortality? No….but I sure felt like a kid when I was drinking it! I know there are several versions of the Ambrosia salad out there. Here is my version all twisted in a milkshake. Juicy pineapples. Sweet mandarin oranges. Luscious whipped cream. Chewy bits of coconut. And soft, chewy marshmallows. Where are the marshmallows you ask?. . . .
. . . . . polka dots!
Yields: This recipe makes 2 large milkshakes as pictured above. Or 4 small milkshakes if you must show restraint!
Level of Difficulty: easy
Mix in a blender:
- 1 pint of coconut ice cream (I used a limited edition Haagen Dazs Coconut Macaroon)
- 1/2 cup milk
- 1 cup frozen pineapples
- 1 cup mandarin oranges, drained
- 1 Tablespoon maraschino cherry juice
Slice 2 or 3 large marshmallows into 2 or 3 slices. Place the sticky side of the marshmallow randomly onto the inside of your serving glasses.
Then slowly fill your glass! Top with whipped cream, sprinkle with a bit of shredded coconut and add a cherry!
Note: The original color of this shake is an off white. To give it contrast with the marshmallows for the polka dot effect, I added 2 drops each of red and yellow food coloring. But you won’t need to do this if you are working with stronger natural colors like berries or chocolate!
